Read moreLast Wednesday, together with Frigorífics Ferrer S.A.U., we launched a series of training and commercial support sessions led by The Kingfish Company in the Barcelona area, aimed at showcasing a premium product such as hiramasa and further promoting its presence within the restaurant sector.
The first meeting took place at Restaurante Xup Xup, part of Arenal Group, where we introduced the product’s unique characteristics and benefits through a presentation and an audiovisual tour of the company’s facilities in the Netherlands, renowned for their strong commitment to sustainability.
The event continued with a live product demonstration in which the chef worked the fish in front of attendees, showcasing different cuts and spontaneous preparations: from a strawberry and kimchi tiradito or a ponzu-glazed flambé with tobiko roe, to more daring creations such as a light hiramasa suquet. A culinary showcase that highlighted the remarkable versatility of a product that performs exceptionally well both raw and cooked.
The second training and commercial support session took place at Restaurante Gala, part of the Isabella’s Group and began with a detailed product presentation followed by an outstanding live tasting of the product. Throughout the experience, the chef delivered a masterclass in elegance, precision cutting techniques and utmost care for the product, while also improvising several raw preparations specially created for the restaurant’s Sushi Club.
We wrapped up our training sessions in Barcelona with a visit to Ikoya Izakaya, part of the Sagardi Group, where the chef worked the product to create two elegant and flavourful dishes.
